How does the min/max feature work? My use is probably fairly unusual. I do open water swims, and I am always curious about how much variation there is in water temperature as you move through the swim course. There is especially a lot of variation in ocean or bay swims where currents may be present.If I were able to attach this to my suit, would I be able to exit the water at the end of the swim and with the min/max function have a record of the temperature range?Do you know of any other kind of instrument that might serve this purpose? The limited memory keeps the lowest and highest temperatures measured by the thermometer in the memory. It is easily reset, so as you get in the water I would reset it, then complete the swim and prior to getting out check the overall min and max. The clip on the cover would allow you to clip it to your suit. However, you would probably want to cut the tip of the sheath off so the thermometer tip is exposed directly to the water. I want to use this as a drying oven thermometer at 180C. The probe stem will be inserted through a port in the oven top. Will the thermometer be damaged if the probe is left inserted into the hot oven long-term?

No, the NIST certification is not included in the purchase of this thermometer. It must be purchased under a separate sku (either 17003-00 or 17101-61 depending upon how many test points you would desire).
